There are two peculiarities that distinguish us most: the family character and living in a “different” part of Tuscany. We maintain the tradition in field work, in the absence of the use of chemical products and in the “manual” harvest. the best that technology can make available to us; using mills with the most modern technologies and storing the oil obtained, in stainless steel containers and at an almost constant temperature, to ensure its maximum preservation and authenticity. The oil we produce is delicate, silky and balanced and contrasts with the classic more bitter and spicy taste of classic Tuscan oils, with a delicate but decisive scent, with fruity and pungent vegetal notes.
The main characteristics of this oil are a low acidity value and a high degree of shelf life, as well as the great nutritional properties it has, in particular the wide antioxidant heritage, atypical for an oil generally with a more delicate profile. The oil produced is obtained from olive trees often over a hundred years old of the Olivastra Seggianese variety, whose presence in our territory can be dated from the Etruscan age.
